Iris wine cellar

In a unique location, beneath 15-century vaults, immersed in the building’s centuries-old history, is the Iris wine cellar, which unfolds in several finely furnished spaces divided into display and tasting areas.

The Iris wine cellar is intended to be a place of meditation and relaxation, where the gastronomic experience begins and ends. It features intimate little rooms specially created for tasting great wines and fine spirits.

But it is also an exclusive location for events and special occasions, with tastings devised ad hoc by our chef Giacomo Sacchetto.

The wine list reflects the philosophy and values of Iris Ristorante, with a handpicked selection of no fewer than 800 labels. Ample space is devoted to local wineries, which account for almost 15% of the selected labels.

Particular attention has also been paid to the craftsmanship of the processes and the sustainability of the products: vines cared for by hand with specialised agronomic practices, agriculture that respects not only the vineyards but also the surrounding environment, care rather than exploitation of the soil, promotion of biodiversity through ancestral knowledge handed down over generations and modernised thanks to ongoing research and innovation.

The wine list also includes the great classics from the most important wine-growing regions, from Tuscany to Champagne, encompassing Piedmont and Burgundy. A broad selection, which does not overlook lesser-known areas, capable of satisfying all tastes: to amuse and fascinate the novice and to amaze and satisfy even the most expert palate.
